Skillet Roasted Potatoes with Garlic & Herbs

This hearty and flavorful skillet-roasted baby potatoes recipe is seasoned with garlic, fresh herbs and crispy bacon for the perfect side dish. Cooked in a cast-iron skillet, these potatoes are crispy on the outside and tender on the inside, making them an irresistible addition to any meal.

Ingredients

  • 24 oz. Tasteful Selections® potatoes, halved
  • 2 tbsp. olive oil
  • 2 tbsp. unsalted butter
  • 4 cloves garlic, minced
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. smoked paprika
  • ½ tsp. oregano
  • 1 tsp. fresh rosemary, chopped
  • 3 slices bacon, cooked & crumbled
  • 1 tbsp. fresh parsley, for garnish

Instructions

  • In a cast-iron skillet over medium heat, cook the bacon until crispy. Remove and set aside on a paper towel-lined plate. Once cooled, crumble the bacon. Leave about 1 tbsp of the bacon grease in the skillet.
  • Add olive oil and butter to the skillet with the reserved bacon grease. Once melted, add the potatoes, cut side down. Let them sear for 4-5 minutes until golden brown.
  • Stir in garlic, salt, black pepper, smoked paprika and oregano. Toss the potatoes gently to coat them evenly with the seasonings. Reduce heat to medium-low and cover the skillet. Cook for another 10-12 minutes, stirring occasionally, until the potatoes are fork-tender.
  • Stir in chopped rosemary and crumbled bacon. Let the potatoes cook for another 2 minutes to absorb the flavors. Garnish with parsley & serve!

Notes

Swap smoked paprika for cayenne if you like a bit of spice.
Try adding Parmesan cheese at the end for extra richness.
For a tangy twist, drizzle with a little balsamic glaze before serving.
Parboil the potatoes for 5 minutes before sautéing to speed up the cooking process.
You can also roast them in the oven at 400°F (200°C) for 20-25 minutes instead of using a skillet.
