Gilled Steak with Herb Butter & Roasted Garlic Parsley Potatoes
Step up your steak and potatoes game by pairing Garlic Parsley potatoes with a savory salt and pepper seasoned grilled steak stopped with garlic and herb-loaded butter.
Combine butter, rosemary and garlic in a bowl and mix. Transfer to a piece of plastic wrap and roll into a short log. Refrigerate until firm enough to slice
Steaks
Brush each side of the steaks with 1 tsp. extra virgin olive oil, then sprinkle with salt and pepper. Let steaks sit at room temperature for 30 minutes while you prep and heat your grill or charcoal. Cook over medium heat for 3-5 mins (per side) for medium rare, 5-7 minutes for medium, and 8-10 for well done.
Remove steaks from grill and allow them to rest about 5-7 minutes before slicing. while they rest, top with slices of compound butter.

Cut potatoes into quarter wedges right in tray.
Toss with 2 tbsp. oil & seasoning.
Transfer to oven safe dish/pan. Roast for 12-14 min. @450°.
