Ingredients
24oz.Tasteful Selections® potatoes, diced
1yellow onion, chopped
1tsp.minced garlic
4c.chicken broth
4c.milk
6tbsp.butter
½c.flour
Salt and pepper, to taste
Optional toppings:
Shredded cheddar cheese
Bacon, cooked & crumbled
Green onions, chopped
Instructions
Place potatoes & chicken broth in large Dutch oven or pot. Bring to boil & cook until fork tender, about 10 minutes.
While potatoes are cooking, melt butter in saucepan; add onions & sauté until translucent, then stir in garlic & sauté another minute or two. Whisk in flour, then add milk & cook over medium heat, stirring frequently until thickened. Add mixture to Dutch oven.
If you prefer your soup chunky, you're ready to add your toppings & serve; for a smoother consistency, use immersion blender or food processor for about 20-30 seconds.
