Crispy Skillet Breakfast Potatoes with Sautéed Veggies

- 1 tbsp. olive oil
- 1 tbsp. unsalted butter
- 24 oz. Tasteful Selections® potatoes, halved
- 1 small onion, finely chopped
- 1 small green pepper, diced
- 1 small red pepper, diced
- 2 cloves garlic, minced
- ½ tsp. smoked paprika
- ¼ tsp. ground black pepper
- ½ tsp. salt
- crushed red pepper, if desired
- fresh parsley, for garnish
In a large skillet over medium-high heat, add olive oil & butter.
Once butter is melted & bubbling, add potatoes. Spread them in a single layer & let them cook for about 15 minutes, until golden, crispy and fork tender.
Add onion, bell peppers & garlic to the skillet. Sauté for 5-7 minutes until the vegetables are softened and slightly caramelized.
Sprinkle smoked paprika, black pepper, salt & crushed red pepper, (if desired) over the vegetables. Stir well to combine and cook for an additional 2 minutes.
Remove from heat & garnish with parsley.
Add a little heat to your breakfast potatoes by adding crushed red pepper flakes.
Top with eggs for extra protein!
