- 24 oz. Tasteful Selections® fingerling potatoes
- ¼ c. olive oil
- 2 shallots, chopped
- 1 garlic clove, minced
- 1 tsp. salt
- ½ tsp. paprika
- ½ tsp. cayenne pepper
- ½ tsp. pepper
- 2 tbsp. fresh parsley, minced
Wash potatoes and cut in either halves or quarters lengthwise. Preheat oven to 425-degrees.
In a large bowl, combine olive oil, shallots, garlic, salt, paprika, cayenne pepper and pepper; add fingerlings and toss to coat. Add potatoes to baking sheet and roast in oven for 25 minutes.
Arrange potatoes on a serving dish and sprinkle with parsley.
Optional: Serve alongside a dish of sour cream topped with a sprinkling of parsley.
