Ingredients

Potatoes

  • 24 oz. Tasteful Selections® potatoes, quartered
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1½ tsp. smoked paprika

Salsa

  • 1 medium tomato, diced
  • 1 jalapeño, diced
  • ½ red onion, diced
  • ½ lime, juiced
  • Cilantro, to taste
  • Salt & pepper, to taste

Protein

  • 1 lb. ground beef
  • 1 Taco seasoning packet
  • 2 tbsp. tomato paste, optional

Toppings

  • Siracha Mayonnaise
  • Sour cream
  • Guacamole

Instructions

  • In a large bowl, toss potatoes with olive oil, salt, onion powder, garlic powder and smoked paprika.
  • Air-fry potatoes for 20-25 minutes at 400°F, shaking basket halfway through, until potatoes are fork tender.
  • While potatoes cook, combine tomato, jalapeno, red onion, lime, cilantro, salt & pepper. Mix well & set aside.
  • Brown the ground beef then add taco seasoning & tomato paste.
  • Once potatoes are cooked, assemble in a serving dish starting with potatoes, then salsa & ground beef. Top the dish with siracha mayo, sour cream & guacamole.
