Ingredients

24 oz. Tasteful Selections® potatoes
2 tbsp. olive oil
1 c. shredded cheddar cheese
4 oz. cream cheese, softened
Pickled jalapeños, chopped

Instructions

Preheat oven to 375-degrees. Toss potatoes with olive oil. Bake until potatoes are fork-tender, about 40-50 minutes. Remove from oven and let cool slightly.
While potatoes are cooling, combine cream cheese, cheddar cheese and chopped pickled jalapeños. Cut potatoes in half and scoop out the center with a melon baller; add potato filling to cheese mixture and stir to combine. .
Fill potato shells with mixture; sprinkle with additional cheese. Bake an additional 15-20 minutes. Garnish with additional shredded cheese and pickled jalapeños, if desired
